José Pariente Verdejo White wine
José Pariente Verdejo is a 100% Verdejo varietal, the flagship of the house, made with grapes from 30-year-old vineyards owned by the family, and from old vineyards of small winemakers.
VINEYARD: The soil of the vineyard, characterized by its boulder platform, is poor in organic matter and has some limestone outcrops at the highest levels. The climate of the area, continental with an Atlantic influence, forces the vines to look for water resources in the depths of the subsoil.
ELABORATION: First, a cold maceration was carried out between 8 and 12 hours. After pneumatic pressing, alcoholic fermentation took place at low temperature in stainless steel tanks, the wine remains in its lees until bottling.
In the visual phase there is a bright straw yellow colour, with greenish reflections.
The aroma, of great intensity, is elegant, fresh and complex. It shows a marked fruity tone, covering the range of stone fruits (peach), white fruits (pear), citrus fruits (lemon, grapefruit). There are also aromas of fennel, lowland and an aniseed, balsamic background.
Fresh fruit notes reappear on the palate. Oily, greedy and elegant with a soft touch of final bitterness, characteristic of the Verdejo variety. It has a great structure that promotes its persistence. The retronasal is complex and intense.
