Fermentation of the yolk juice for approximately 19 days in stainless steel tanks. Post-fermentative aging for 4 months, maintenance with fine lees to give it volume.

Has a bright straw yellow color with golden iridescence. Intense varietal aromas: tropical fruits, highlighting banana, pineapple and melon. The palate is friendly, voluminous, enveloping and glyceric character, pleasant acidity that intensifies its freshness. In retronasal tropical aromas return.

The pairing is perfect with appetizers and entrees based on seafood and fish, for example carpaccio of cod, oysters, marinated anchovies, rice with carabineros, salad of crayfish, etc.
