Real de Asua Red wine
This wine is made from grapes from our best Rioja Alta vineyards. The harvest date is determined with periodic analyses and tastings of the grapes, indicators of the optimal state of ripeness. After careful selection in the vineyard and in the winery, the grapes are transferred to French oak vats where alcoholic fermentation will take place. The wine is discovered in a new French oak barrel where the malolactic fermentation takes place and its subsequent aging takes place for 18 months.
Wine made with grapes from the Carromaza estate in Villalba, municipality of Rioja Alta located at an altitude of 600 m. The climate is cold, windy and at risk of frost but this estate, located under the Sierra de Cantabria, is protected under its skirts. The vineyard is cultivated in glass, sandy soil, south-facing slope and annual rainfall is around 700l.
Harvest in mid-October, manual, in 20 kg boxes and transported to the warehouse, which is only 5 km away. The selection of the grapes is twofold, first in the vineyard and again upon arrival at the winery. Cold maceration of the whole grape that the next day is semi-squeezed and by gravity we fill a small 5-year-old French oak wood vat. The yeast is autochthonous, we go back by baking and after the alcoholic fermentation the wine continues for a few days macerating in the heat, the date of discovery is determined by the tastings, the fermentation temperature
