Pressing and subsequent fermentation, followed by aging on lees for 5 months in a steel tank. A small proportion ferments in French oak barrels.

Pale greenish yellow color. Aroma: Of good intensity and complexity, the nose recalls lemon, custard apple and lemon pear. Then come nuances of herbs and a background of jasmine. Palate: Lemon pear, Green apple, Mineral.

White meat, white fish, mollusks, crustaceans.
