VINIFICATION: Whole grain, unly squeezed. 50% of the whole bunch with scrape. Cold pre-fermentation maceration from 4 days to 12oC for the extraction of aromas. Fermentation at 22oC in stainless steel and concrete tanks, with native yeast and seeking respect and the typicality of the raw material. Spontaneous malolactic fermentation in 500 litre French oak barrels. 12 months in 500 litre French oak barrels of one to four wines. View: Low layer plum red color. Nose: Aromas of cherry, ripe red fruit and hints of incense especially at the beginning. Mouth: Juicy, fresh, with good acidity and a fruity tannin. Great combination of freshness and volume with long presence on the palate. Grilled or grilled lamb, white meats with strong sauces, stews and stews of powerful and aromatic pork, lamb, duck or pheasant, as well as with grilled red meats. Equally recommended with sheep cheeses.
