Las Moradas de San Martín La Sabina

Vineyard located on a mountain plateau on the Madrid slope of the Sierra de Gredos with great northwesterly winds, and almost 900 m high, on granite soils of sand and rock, with slightly acidic pH. A total of 21 hectares in glass formation and strictly dryland form the landscape of these old historic vineyards, worked organically. This particular terroir provides a raw material with excellent acidity, good maturation, great balance and impeccable health status, to obtain very personal wines that age very elegantly over time. Vinification: the grapes are incubated by plots. After destemming, they are kept naturally with the native yeasts of the grape itself for three weeks with temperature control, so as not to lose their aromas and with hardly any intervention to avoid extractions. Once the malolactic fermentation has been carried out, also with native bacteria, it is aged for between 10 and 16 months, with an average of 14 months in 500-litre French oak barrels of different uses, depending on the plot, for subsequent coupage of the wines. It is bottled without filtering or clarifying.

Despite being old and made only with grapes, without any preservative, this wine remains cheerful, with a very lively mouth of balsamic aromas, characteristic of the most authentic variety of the Sierra de Gredos, together
