Marqués de Vargas Red wine
Marqués de Vargas Gran Reserva has a classic preparation with destemming. The selected grapes are fermented in a 3,000 kg stainless steel tank for 15 days with temperature control at 31ºC. Going back and bazuqueos daily and a long maceration for a period of about 20 days.
Aging: Malolactic fermentation is carried out partly in the tank and partly in the barrel. The aging period begins in January, to remain for 24 months in 30 new French and Russian oak barrels. Regular watering every 4 months at the beginning and every 6 months thereafter.
Intense, fresh and vibrant aroma with fine notes of candied fruits on a balsamic, spicy background, coffee and mentholated chocolate. It has a good structure, round and with sweet tannins, elegantly polished in its long aging. This wine perfectly reflects the sense of terroir.
Roasted beef sirloin, game, baked lamb.
