Marqués de Vargas Reserve:
Elaboration: Classic with destemming
Fermentation: In stainless steel tanks of 22,500 Kg, 11\/13 days at 29ºC\/ 30ºC
Maceration: Pumping over and punching down daily. 11 days with the skins once fermentation is finished
Treatment: Neither clarification nor filtration
Aging: Once racked with the malolactic fermentation finished, aging begins in January 2009
Barrels: 30% new American oak 40% American, French and Russian oak of 1 wine 20% new French oak 10% new Russian oak (manufactured by Seguin Moreau and Murua)
Racking: 2 first rackings every 5 months, then every 6 months
Aging: 23 months
Intense cherry red color with violet edges. Excellent combination of berries or red fruits such as strawberry and raspberries with a background of sweet licorice. Great balance in acidity together with silky tannins trigger a warm entry into the mouth and a long aftertaste, a wine to enjoy.
