Valduero Una Cepa Red wine
The harvested grapes ferment for 9 days between 23oC and 28oC temperature, followed by a maceration of 10 days. The vineyard that gives this wine is grown in glass, without irrigation, without chemical subscriber, strict pruning in winter, pruning in green in June, balance in cultivation and harvest by hand. Yield three times lower than that of trellis growing vines, quality grapes three times higher. Result: each plant, each strain, only gives one bottle. This is a very high-layered cherry red wine; to a still drink, we can notice a complexity of aromas and an extraordinary intensity. Once we move the wine through the walls of the glass, the aromas of fruit and wood are assembled and memories of ripe red fruits, leather, toasted, vanilla begin to appear. On the palate it is a well-structured and balanced wine. The integration of alcohol and acidity is excellent and a different aftertaste is appreciated to the range of classic Valduero. It's the grape. Red meats, blue fish, cured cheeses and cold cuts.
