Finca Terrerazo Organic wine
Vinification: Each plot or lot is vinified separately. Cold maceration on vintage boxes. Double selection table, destemmed, lightly squeezed. Fermentation in 35 hectolitre French oak vats at 28ºC for 8 -10 days with small pump-overs and pigeage. Post-fermentative maceration from 12 to 16 days. Discover manually by gravity, using only the flor wine.
Aging: Malolactic in barrel and 4 weeks of batonage. 21 months in French oak.
View: Intense cherry red.
Nose: Black-red fruit notes predominate and above all, a lot of freshness and vegetable notes. Balsamic, menthol and mountain notes under the characteristics of a controlled Bobal.
Mouth: Present tannins, sweet and juicy, with great acidity, round from now on, the wood does not mark the wine.
Hunting, steak, stewed meats, stews, suckling pig or baked lamb, cured cheeses, marmitako, manchego gazpacho.
