Fermentation for about 10 days, is later continued 5 - 8 days with daily overpumping. Passes to new American oak barrels for 6 months.
Deep red dress cherry dark, with good layer, clean and bright. Light aromas of ageing with predominance of fresh fruit. In the mouth, well integrated acidity, with final broad and intense flavors.
Suitable to accompany very tasty fish, fine charcuterie (Iberian), all kinds of roasts, stews to grilled foie gras, Filet Mignon, duck, Partridge, hunting of pen, cured and strong dishes.
