Gabaxo is a sympathetic tribute to the nickname with which his producer, the French winemaker Olivier Riviare, was known in his early years in Rioja, where he arrived in 2006 after having worked in different renowned wineries. Since then, Olivier Riviare Vinos offers a faithful reflection of the terroir and grapes thanks to a crop without any herbicides or chemical fertilizers, with treatments based on biological products and a winemaking without added yeasts. Made in equal parts with Grenache from Rioja Baja and Tempranillo from Rioja Alavesa, Gabaxo uses this last variety to bring seriousness and concentration to a fine and elegant set. After a traditional winemaking process, the wine is aged for 9 months in French oak barrels and a subsequent stay of 3 months in used wooden vats. A very easy and appetizing author's wine on any occasion, Gabaxo is presented on the nose with aromas of ripe red fruits (strawberry jam), an outstanding presence of violets and mineral notes. On the palate it is tasty and fresh, perhaps something more mature than on the nose, with very well integrated tannins thanks to the optimal work with the wood. It shows the French face of Rioja, with delicate and fine acidity on a background of good spicy fruit. With some time in the glass, an elegant background of orange peel and Milan gum emerges. Gabaxo is a long wine, with nerve and a very pleasant finish that seems to claim one more drink, a wine for all audiences not without character. Aromas of ripe red fruits and very floral with predominance of violets. On the palate it is a tasty and fresh wine in which predominates notes of strawberries and wild blackberries with spicy nuances. Very nice finish. Grilled red meats, grilled pork, cured cheeses, eggs.
