Marqués de Vargas Red wine
Elaboration: Classic with Destemming. The selected grapes ferment in 3,000 Kg stainless steel tanks for 15 days with temperature control to 31 ° C. Traced and 0ver daily and a long maceration during a period of 20 days.
Aging: malolactic fermentation takes place partly in tank and partly in barrels. The aging period commences in January, to stay for 24 months in 30 Russian and French oak barrels. Racking regular every 4 months at the beginning and every 6 months thereafter.
Aroma intense, fresh and vibrant with fine notes of fruits candied on a background balsamic vinegar, spicy, coffee and Mint chocolate. It has a good structure, round and sweet tannins, elegantly polished in its long aging. This wine reflects perfectly the sense of terroir.
