Fermentation: 10 days with two pump-overs daily. Traditional production, 100% destemmed. Temperature control between 28 and 30º C.
Malolactic Fermentation: In barrel.
Ageing, stabilisation: Barrel: 20 months in new Bordeaux barrels made of French (80%) and American (20%) oak. Rackings every four months. Bottle: Unfiltered bottled.
San Vicente 2010 very intense cherry is on display. On the nose, notes of character, spicy, fine reduction, ripe fruit, creamy oak, earthy, toasted stand out. On the palate it is powerful, tasty, ripe tannins, toasted.
Big game and feather game, red, white and gelatinous meats, roasts and stews. Rack of lamb with potato gratin. Pork leg. Cured cheeses.
