Salas Red wine
Salas is a red wine made by Bodega Aiurri in the DO Rioja.
The plot of land in Salas sits under the foothills of the Serranía de Toloño in the municipality of Leza. Old vineyard with vines that are around a hundred years old that settle on silty loam soils. These particularities, together with the microclimate that originates the mountainous orography, make Salas a plot with unique and exceptional characteristics for the maturation of the raw material. Vines in which Tempranillo, Garnacha and Graciano predominate along with other plants of various white varieties such as Viura. We could speak of micro plots with their own identity within the same vineyard.
The grapes from the centenary plot of the Salas area are harvested by hand after exhaustive monitoring throughout the ripening cycle. To harvest the grapes in a perfect state of ripeness, the harvest is carried out in two phases two weeks apart. Once in the winery, the must moves by gravity and is vinified separately with spontaneous fermentations, gentle and short extractions and very controlled temperatures in French oak vats.
