Raíces de Valparaíso Red wine
VINEYARDS: Selection of own vineyards located in Sotillo and Quintana del Pidio (Burgos) and Pesquera (Valladolid), with a height between 900 and 1050 meters. Vineyards with an average age of 40 years and calcareous clay soils of deep and very sandy gravels on the surface.
ELABORATION: Alcoholic fermentation and maceration in French barrels of 500 liters in contact with their skins at a maximum controlled temperature of 28 °C.
AGING: After fermentation and maceration, it is decubated to new French oak barrels of 225 liters where it remains 14 more months with racking every 6 months. Bottle refinement for a minimum of 6 months.
Deep cherry red color of high layer, bright and attractive. Elegant aromas of red fruit in jam (raspberry, plum, blackberry), minerals, truffle, cocoa and balsamic touches. In the mouth it shows a great structure and elegance with intense fruit load and a very long finish where we can appreciate balsamic notes, licorice and minerals.
Meats in general, spoon dishes.
