Amontillados are some of the most interesting wines within the wines of Jerez. They are first bred as Chamomile with biological ageing process under the veil of flor for 8 years and then become an oxidative ageing for another 7 years. A total of 15 years of breeding that contribute to wine extraordinary nuances of both crianzas.
