Oloroso Alburejo
Sherry wines are made with Palomino grapes. The harvest takes place at the end of August or beginning of September depending on the year. Once collected, it is fermented in temperature-controlled steel tanks.
Once the fermentation is finished, the musts with more body are selected for the elaboration of our oloroso. Initially the natural alcohol content is 12 % Vol. This wine of the year is headed with wine alcohol up to a graduation of 17.5% Vol.
The aging process is through oxidative aging by the Jerez system of solera and criaderas, in American oak boots of approx. 500 liters of capacity.
During the long period of aging of this oloroso, there is a complex process in which the extraction of aromatic compounds from the wood, the oxidation and the concentration of the substances of the wine are joined, reaching this wine the 18.5% Vol. of alcoholic graduation.
Dark brown with amber nuances, clean and bright. It has a great aromatic intensity, with aromas of nuts and deep notes of wood and vanilla, typical of its long aging period. In the mouth it is dry, warm and velvety, it presents notes of nuts and wood with a long persistence and a long finish.
Paired with cured cheeses, partridge stew, Iberian cheek (game meat), bull's tail and fish.
