Vinification: The bunches are destemmed and gently squeezed. The varieties ferment separately in stainless steel tanks, with temperature control. The curdling has a duration of 8 days during which mounting and tapping are carried out, to favor the contact of the must with the skins and cause a slow and natural extraction of aromas and polyphenols. After fermentation, the solid parts of the grapes are pressed in vertical presses, through a smooth and slow process that favors the extraction of color and mature tannins that reside in the skin.
Aging Process: Aged for 18 months in 225-litre American oak barrels.
Fine aromas of plum, blueberries and currants that anticipate a floral, spicy and balsamic background, so characteristic of our Ygay Estate. Juicy, round and with a great balance in the mouth. A wine with muscle and great potential.
