La Capilla Red wine
VINIFICATION: Slow alcoholic fermentation of whole grain in small stainless steel tanks with indigenous yeast. Prolonged maceration, but avoiding over-extractions. Malo-lactic fermentation in French oak barrels. All movements by gravity and with the utmost care. Preserving the primary, fruity aromas and trying to keep to the maximum the great depth of color, typical of the area. TOTAL STAY IN BARRICA: 15 months in new french fine-grained oak barrels and 1 wine in equal parts. • AFINATED IN BOTTLE: 2 years before the date of consumption. Deep-colored wine with a high robe, glyceric and unctuous in the glass. Intense nose, with sensations of fruity freshness wrapped in a very integrated wood that complements but without masking the varietal fullNess Tinta del País in ribera del Duero. Fresh, lively mid palate with elegant complexity, with creamy nuances and fine toasted notes. Enveloping and dense polymerized tannins. Subtle and elegant. Balanced to drink from now on and able to age in the bottle for several years
