Hacienda Solano Viñas Viejas Red wine
This wine owes its name to the selection of vineyards chosen for its production, all over 60 years old. It is a red wine with a profile that will fit very well with the tastes of the most orthodox fans of Ribera del Duero standards, with a good balance between the notes of red fruit and the aromas coming from ageing in barrels.
The harvest is manual, in boxes of 12 kg and with a selection of grapes in the vineyard. Each plot is vinified separately. Before fermenting, perform a cold maceration, 8-10°C for 24-36 hours. The alcoholic fermentation is in stainless steel tanks with temperature control for 11-13 days with slight overruns and gentle pigeage. After fermentation, the skins remain in contact with the wine, macerating for 5-8 days. Aging is 14 months in French oak barrels and 4 more months in storage.
