Hacienda Solano Selección Red wine
Hacienda Solano Selección is a wine made with 98% Tempranillo, 2% Albillo, from family vineyards located in La Aguilera (Burgos), with an average age of 30 years. Work the vineyard in a sustainable way without the use of pesticides, only organic fertilizers. Goblet pruning. Manual harvest in 12 kg boxes of each plot separately, from mid-September to early October 2018. Cold maceration 8-10ºC for 24 to 36 hours. Alcoholic fermentation in stainless steel tanks at 26ºC with temperature control, for 11-13 days, with small pump-overs and \"pigeage\". Post-fermentation maceration for 5 to 8 days. Aged for 8 months in French oak barrels of 225 and 300 liters and 3 months in tank.
Intense, limpid and bright violet color.
Red fruit aromas with high intensity.
Enveloping tannins on the palate with volume, a persistent finish.
Rice, sausages, not very cured cheeses, small game, mushrooms, poultry or white meats.
