Arinzano La Casona Red wine
Vinification: Harvest in a small 12 kg box, bunch selection, qualitative destemming (oscillys) and berry selection. Unsqueezed incubated with prefermentary macerations between 8-12oC.
Fermentation: Fermentation for 15-20 days with a high level of extraction to reach the subsequent aging capacity, as well as the desired structure. Daily rises and at least two delestages in winemaking.
Aging: 14 months in French oak barrels, 40% of them are new and 60% second use.
Color: Deep garnet
Aroma: Complex and elegant perfumes with balsamic, toasted, aromatic woods, licorice, red fruits and lactic notes.
Palate: Very tasty, fresh, enveloping and fluid. Highlights include notes of black fruit, cassis, blackberry and cinnamon with an elegant barrel-scented finish. Tasty and persistent evolution with elegant tannins.
Roasted red meats, beef, Iberian sausages, feathered game meat and aged cheeses.
