Epílogo Sauvignon Blanc White wine

For the first time since its creation, this wine is a monovarietal made 100% with the Sauvignon Blanc variety. From Yuntero a selection of the best plots of Sauvignon Blanc is made, in addition to an exhaustive control of previous ripening to receive the grapes at their optimum moment of ripeness. A night harvest is carried out to receive the grapes as fresh as possible and avoid possible oxidation problems in it. In the cellar, a small film maceration is carried out to achieve a better extraction of the aromatic compounds of the skins, to later go on to obtain only the yolk must by direct bleeding, without any pressing. This yolk must is cleaned by cold static settling at about 8ºC in isothermal deposit for 30 hours. This flanged must goes on to ferment at very low temperatures, approximately at 15ºC, to extract greater aromatic expressiveness.

Visual Phase: Bright, pale greenish yellow.

Olfactory Phase: Great aromatic intensity but above all complexity, where we find very well integrated the floral and exotic aromas of the Sauvignon blanc variety (grapefruit, mango, passion fruit).

Gustatory Phase: Very fresh wine with good volume in the mouth. It is also very refreshing because of the small point of natural carbonic that the wine has. It is soft and delicate. The passage in the mouth is long and persistent.

Ideal for rice, cooked seafood, grilled, blue fish and poultry.
