Harvest: Always with the idea of obtaining a perfect acidity, the grapes are harvested at the optimum time, this key decision being to get a fresh and aromatic wine. The harvest takes place at the end of August, at night, to ensure the best temperature and the highest quality of our grapes. Our vineyards of white varieties are the closest to the winery, thus ensuring a quick entry of the grapes to our facilities. Vinification: The grapes are cooled to 10oC and macerated for 5 hours in the press, in controlled atmosphere, and then gently pressed. After static settling of the yolk must, it is fermented at a controlled temperature of 13oC; thus, we retain all the fresh varietal aromas. Fermentation lasts 3 weeks, and once finished, the wine is kept for 3 months on its lees to obtain greater complexity , The Viognier variety represents everything that is expected of a young white wine. A fruity wine with a floral background that makes it very elegant and intense. On the nose there are notes of orange, white stone fruits and light notes of flowers.
