Enrique Mendoza Chardonnay Ferm. Barrel

Vino de Paraje: It is a selection of vineyards within a certain landscape that helps us express the best of it. Its unique character. The landscape is the protagonist, with its vines, its soils and its history.

Variety: 100% Chardonnay, from our Farm "El Chaconero" in the place called Cabezo de la Virgen de Villena.

Elaboration: It is harvested at dawn, in boxes of 18 kg. to keep the berries intact. The grapes are stored for 24 hours in cold rooms so that they enter the cellar at a temperature of 3ºC. They are destemmed and pressed directly to obtain the flowering must that will ferment in 500-litre barrels of Allier oak at a temperature of 18ºC. The wine remains in contact with its fine lees, making batonnages until bottling.
