Coto de Hayas Garnachas Centenarias Red wine
Coto de Hayas Centenary Grenache comes from very old, rain-fed Grenache vineyards, cultivated by the traditional goblet system in the Monte Alto and La Sarda vineyards, located on very arid soils, with slates and terraces, of reddish earth, on the slopes of the Iberian Mountains, in the foothills of the Moncayo.
Harvest first week of October.
Elaboration: Traditional method. Cold maceration for 24 hours to obtain fresher fruit. Fermenting at 26º C with temperature control. A maceration is carried out over ten days and, once the desired parameters have been obtained, bleeding and pressing are carried out.
Aging: Aged in French oak barrels for four months during which malolactic fermentation takes place.
Color: Intense cherry red with a clean and bright appearance. Aroma: High intensity, fruity and oral aroma, very clean and powerful. It has a marked varietal character with light toasted and spicy tones provided by the ageing in wood. Palate: Soft, voluminous, broad, fleshy, harmonious and structured attack. Rich in nuances, very balanced and with a broad and very long aftertaste.
Grilled lamb, roasted red meats, feather game, aged cheeses.
