Barón de Chirel Verdejo Viñas Centenarias White wine

Baron de Chirel Verdejo Viñas Centenarias is a unique wine, both for the meticulous attention to detail during the vegetative period, and for its subsequent vinification.

Very old vines of more than 100 years old, free standing, prephylloxera, from the areas of Aldeanueva del Codonal and Aldehuela, cultivated in vases.

Segovia Verdejo is different from Rueda due to the acidic and granitic character of the soils.

It is harvested by hand in boxes of 20 kg capacity.

Upon arrival at the winery, it passes through a double table for the selection of bunches and whole grapes. Only the flowering must is used for this wine as it has a not very high turbidity and high quality.

We are looking for a contribution of quality wood that gives greater packaging to the wine, more depth, but that respects the character eminently.

The wine obtained has a dense, long and tasty mouth. Its natural acidity, thanks to the altitude of the farms (some at 900 meters) , ensures a good evolution in the bottle.

This wine pairs well with fish in sauce, white meats, roasted lamb, cheeses, grilled vegetables and legumes.
