
Baigorri Negu Red wine
Baigorri Negu is a red wine made partly with whole bunches and partly destemmed from the Tempranillo variety. All the grapes have been selected by hand, bunch by bunch and grain by grain using selection tables using automatic computer vision systems. Grapes macerated in open stainless steel tanks, with temperature control and long intracellular fermentations. The upgrades of the musts are carried out naturally by gravity, using the immersion of the hat with its own juice. For the final extraction of the wine, a pneumatic press is used, then it is transferred to wooden vats, where it undergoes malolactic fermentation. Once this is finished, the wines are distributed in French oak vats, where they are rounded up for 4 months.
Its fruity aroma of currants and blackberries stands out, with notes of licorice, Juanola pills and floral perfumes. We find its passage on the palate pleasant, elegant and fruity with a balsamic finish. Very balanced, with average storage capacity.
It is a perfect wine for all types of stews, sausages, pastas, game dishes, roasts and tapas in general.
