As Sortes White wine
As Sortes is made with grapes from the oldest vineyards on its own. There are 6 small \"sortes\" that were planted by local winegrowers in the late 70s and early 80s and that Rafael Palacios acquired upon his arrival in the region during the years 2004 to 2007.
They are located on the north face of the Bibei Valley, in Santa Cruz do Bolo and at an altitude of more than 680 meters. They are strains of the Godello variety with an average age of 40 years, and clones recovered from old traditional vines within the Revival plan (recovery plan for native varieties of Valdeorras). Its soils are pure in granite sands, not very fertile and with low yields, which produces wines with a marked geo-climatic character and great personality. Viticulture is based on respect for tradition, the use of organic treatments and the management of work within biodynamic agriculture. The must ferments in 500 liter barrels. Aged for 8 months in barrels.
Gold color with steel trim and new gold flashes. Clean and very bright, it has an elegant teardrop. Nose of high intensity, fragrant and suggestive. Its aromas of yellow stone fruit, its citrus and tropical notes and its pleasant floral aromas predominate on a markedly mineral background with slight toasted nuances, subtle sweet spices, such as vanilla, and soft vegetable hints. On the palate it is intense. It has a greasy and unctuous texture, with excellent acidity that refreshes and defines it. Very long and very persistent finish with mineral notes in retronasal. Elegant, deep, a white wine with a lot to tell.
White meats, White fish in sauce, Cod, Oriental dishes, Spicy dishes, Sushi, Tempera.
