Huella de Merseguera White wine

We select the best Merseguera grapes from our payment and harvest them at night to take advantage of the freshness and avoid oxidation during the sale to the winery. We have hopper trailers that go directly from the vineyard to the winery.

The harvest is received throughout the night in the cellar and we proceed to the destemming and crushing. We apply liquid CO2 at -30ºC to cool the harvest in line at 10ºC and avoid oxidations in the must. We measure 12 hours at 10ºC of temperature and press with pneumatic press gently.

Only the clean must we ferment at 16ºC of temperature adding our selection of yeasts.

Color: Crystalline greenish yellow.

Aroma: High intensity, with hints of fresh fruit, ripe and with a slight floral nuance.

Taste: Good texture, tasty, with fruit weight and fresh acidity in the end.

Ideal to pair with rice dishes with fish, seafood and grilled vegetables.
