Valdubón Tempranillo Red wine
Valdubón Tempranillo is made entirely from Tinta del País (Tempranillo) grapes. The vines originating in Valdubón are divided by different terms of Ribera del Duero, their main origins being the terms of Roa and Milagros. The care applied to the vineyard is closely monitored, focusing efforts on a clarification of bunches that leaves the vine with an average production of 7-8 bunches\/strain that represent a maximum yield of 4,500 kg\/Ha. - a ripening control is carried out of all the plots that supply Valdubón, establishing the optimal harvest date for each vineyard. The evolution of the Baumé grade, acidity and color potential is controlled. Based on the results obtained, a first classification is carried out, with Valdubón Tempranillo intended for those vines that stand out year after year for providing very fruity wines, with medium-high structure, good acidity and ripe tannins. The vineyards destined for Valdubón Tempranillo are harvested at night to ensure a low-temperature cellar entry and a smooth fermentation start that keeps all the fruit on the nose and mouth. The cut grapes are transferred to the winery as soon as possible, being ground within 6 hours after harvest. In the glass it is young and very covered, intense red with cheerful garnet nuances.
