This new wine, from vineyards of about 20 years old in clay and shale decomposed in Valdeorras, in the eastern end of Galicia, is located at the lightest and freshest end of the spectrum, which makes it ideal for drinking fresh in summer
It is bluish ruby without oak and smells and tastes like crushed raspberries with white pepper, mineral earth and a pinch of smoked paprika and its fresh and crisp acidity surpasses any tannin.
Bressaola, sausages, spinach tart and feta cheese or spinach banitsa, tomato cakes, tuna or braised salmon, lamb scottadito or lamb rib with herbal crust, or cheeses such as Manchego tender
