VITICULTURE: Albariño and Caíño come from plots with lower altitudes, that is, with higher humidity and warmer, which means an earlier harvest and therefore greater concentration, lower acidity and more body in the wines. This Albariño is the earliest harvested, between September 24 and 28 and the Caíño is the last variety to be harvested, between October 1 and 4, being the latest.
The Loureiro comes from our vineyards at higher altitude and lower humidity, fresher, causing a slower maturation which gives us a lively Loureiro with intense aromas and softness in the mouth. Harvested on September 29th and 30th.
VINIFICATION: After a cold maceration of different durations depending on the variety, we select the musts of each one to make the mixture that will ferment in the French oak barrels. Once the alcoholic fermentation is finished, the wine is aged on lees for 4 months with periodic battonages, at the same time producing malolactic fermentation. The wine is refined thanks to a six-month cold rest and bottled.
The perfect fusion between French oak and the exclusive character of our three varieties stands out in this wine. The aromas of ripe apple, mandarin, aromatic herbs and quince are linked with the notes of melted butter, pastry cream and toasted hints provided by the oak that give it greater complexity.
In the mouth it is broad, tender and dense, it is chewed, showing a powerful and long finish in the mouth with mature, honeyed sensations and smoky touches of the fine woods that keep it.
Due to its great creaminess and depth, it pairs with a wide variety of dishes, from baked fish to white meats, rice, pasta and even foie.
