Mayor de Castilla Red wine

From the monitoring carried out throughout the year to our Ribera vineyards, we choose those that, due to the terrain or climatic conditions, deserve special attention to allocate them to the aging process.

The Tinta del País variety is collected by hand in order to obtain the maximum polyphenolic load. Normally it is during the second half of October when the cluster is still smooth and fresh.

The harvest, the transfer and the fermentation, take place slowly, with care and giving time to carry out the transfer of all the potential that each grain encloses to the wine, which is gradually being structured. The contact of the skins is prolonged more than 30 days, the discovery is by gravity, without pressure, and rushing every drop that flows, transferring the desired expression.

The wood is part of the end of the fermentation, and with the different trasiegos to which it is subjected, it is enriched with different origins and ages of oaks that with 12 months that lasts their aging, confer the desired oral touch. This aging is carried out during the year following its elaboration, so that for bottling it will remain another 24 months in the bottle until the two calendar years for its commercialization.
