Sorte o Soro White wine
Sorte o Soro is a single-vineyard wine, located in the Bibei Valley - Santa Cruz do Bolo.
It is a sorte planted in terraces in 1978, with an original Godello clone of very low vigour and from which a mass selection has been made for the reproduction of plant material for the new plantations of the property.
Its south-west orientation at 710 meters of altitude, is open to the northern slope of the Bibei Valley, receiving a permanent breeze that defines its dual character, between maturity and freshness. Its granite floor stands out for its fine sands with quartz schist. This particularity gives this wine its marked saline character and its savoury and horizontal minerality.
It is grown in a traditional way with animal traction and applying the methods of biodynamic agriculture, as well as pruning and harvesting that are carried out according to the lunar calendar.
Fermentation in 500-litre barrels and aged for 8 months.
It has great elegance and marked aromas of tangerine peel and magnolia flowers, very subtle and elegant with pleasant minerality. Not only is its elegance on the palate magnificent, but it also has great acidity and an amazing balance; It is ethereal, yet powerful, \"iron fist in velvet glove\" with the electric minerality of granite.
