Sierra Cantabria Red wine
Traditional vinification with 100% Destemming. Controlled fermentation between 25 and 28 ° C and planting of selected yeasts (Sacharomycces Cerevisae).
Maceration for 16 days, with two remontage per day at the beginning and traced lightly over the past ten days. Ageing: Barrel: 14 months in French and American oak Bordeaux type barrels. Age of the barrel: maximum of three wines. Racking regular every 4 months.
Color: Ruby-Red of medium intensity light orange hues on the edge of the Cup, clean and bright.
Scent: intense. Light lactic notes, red fruits and spices. Shows a good development of the secondary aromas (vanilla, cocoa, roasted coffee) breeding by providing a good balance and persistence.
On the palate: tasty, well armed and with tannins in good balance with acidez-alcohol shows. The fruity character dominates slightly over the flavors of toasted, roasted coffee, cocoa and vanilla, giving you a very interesting complexity.
Dishes recommended: cooked and vegetables, red and white meats, roasted Castilian, stews, hunting of hair and feather, cheeses and pate. Pigeon roasted with almond sauce.
