Las Moradas Albillo Real White wine
The aeration of the vineyards at almost 900 meters above sea level on fresh, well-draining soils provides its imprint. The San Martín native calls the Albillo Real grape variety Tempranales, because of its early ripening.
The grapes macerate for 24 hours in cold, then the whole bunches are pressed and vatted until fermentation with the yeasts of the grape itself starts naturally, for three weeks. Subsequently, a 6-month aging is carried out in used French oak barrels of 300 and 500 liters capacity, where batônages are made on a full moon. 30% was made without sulphites, performing malolactic fermentation, giving the wine greater clamosity. After the cold of winter, necessary for natural cleaning, it is bottled without filtering or clarifying.
Pale color and aromas that give us slightly sweet memories of honey, pears, jasmine, orange peel, which make its passage in the mouth more surprising for being of great volume, unctuousness and silky, with a saline and mineral finish, enhanced by slight bitterness and balanced acidity.
