Pazo Pondal White wine
Traditionally and partially ecological through regeneration of soils with reproduction of microorganisms. Selected plots of old vines. Manual harvest in 20kg boxes. Only flower must without pressing. Cold maceration. Controlled fermentation. Aged on its own lees, shaking them twice a week for 6 months. Part of this wine is aged for 18 months on its lees.
On the nose it presents a complexity where floral notes and aromatic herbs appear, with elegant touches of white fruit and light citrus touches that reinforce its freshness. There are also subtle spicy notes combined with an interesting minerality that suggests elegance and character. The palate highlights a creamy, broad and good-density step, well balanced for its freshness and salinity, characteristics of the terroir, which allows it to integrate its excellent acidity well and provides good depth, combined with a salty point that marks its personality. Long and tasty finish with a very good aftertaste.
