Náiades White wine
Náiades is a white wine aged for 7 months on lees in 100% French oak barrels. The grapes with which Náiades is made come from prephylloxera strains, which exceed the century of existence and are located in small payments or majuelos with a sandy surface. It is a serious, concentrated and varietal wine, the maximum expression of the Verdejo grape. Original and avant-garde, it has little to envy to the best whites in the world.
Clean and bright intense yellow, with golden undertones. On the nose, the first impression is not very good. The toasts of the barrel are extremely intense and scary. After intense oxygenation, he recovers his breath and, under the sibylline presence of the barrel, which is continuously present, the much-desired fruit, citrus, mandarin, peach and some white fruit aromas appear. After them, the vegetable and floral hints and diffuse mineral notes appear. On the palate it is something else, it penetrates with appreciable density, very unctuous, and excellent body. The wood accompanies the good fruit with courteous gentleness, which manifests itself with a noticeable length and breadth. It has an excellent structure and balance, and an imposing acidity that detracts from the sober texture based on oak ageing. Slightly bitter finish, with a herbaceous aftertaste that interacts exceptionally with the aforementioned acidity.
Clams, lobster, baked white fish, semi-cooked raw pasta cheeses.
