Allende Blanco White wine

Average age of the vineyard, 55 years old, high density plantation. With glass pruning. Clay soils with deep gravels. Sustainable cultivation that respects the environment and follows the natural cycles of the plant, with organic fertilizer and mechanical tillage without the use of herbicides. Manual harvest and subsequent manual selection of bunches at the entrance to the winery.

Vinification: Soft pressing of the bunches in a vertical press. Static decanting of the flower must for 48 hours. Fermentation in new French oak barrels for 28 days at 20°C.

Aging: Fourteen months in Bordeaux French Oak barrels. The first seven months with lees, performing Battonage twice a week. Subsequent racking and seven months without lees.

Bottled: Bottled with gentle filtration without clarification.

Golden yellow, lemon color, absolute clarity. Elegant and subtle nose with a souvenir of citrus fruits (grapefruit) and stone fruits (peach and Claudia plum), Balsamic souvenirs. Tasty, oily mouth, unctuous with an appreciable volume and great lightness in the passage of the mouth, enormous persistence in retronasal.
