
Dehesa de los Canónigos Solideo Red wine
Dehesa de los Canónigos Solideo is the reserve wine of Dehesa de los Canónigos and was rescued with the celebration of the winery's 25th anniversary, in 2014. Its name means Alone before God, also used to designate a silk cap that the Pope, the bishops and some of the clergy usually wear to cover their heads. A reference to the winery's ecclesiastical origins. A wine that is reserved only for exceptional harvests. A wine with a long life that represents elegance with capital letters. Aged for 20 months in American barrels, and 4 months in French barrels.
Color: High-layer ruby.
Nose: Excellent aromatic palette, with aromas of black fruits, such as plum, black cherry in liquor, blackberry or zara leaf. Also noteworthy are the aromas of eucalyptus, montebajo and spices such as licorice, cloves and nutmeg, with souvenirs of wet stone.
Mouth: Fresh entry, with medium acidity, somewhat liqueur. In retronasal the medicinal aromas and spices (juanola) appear again. A long-lasting wine.
