
Malcorta Verdejo Singular White wine
The malcorta is an almost extinct Verdejo grape, rescued by Javier Sanz Viticultor after years of research to make a unique wine. Traditionally, the verdejo malcorta was cultivated in the D. O. Rueda, but the difficulty of its harvest, hence its malcorta name, condemned it to disuse. Javier Sanz Viticultor has reproduced the genetics of this clone because it provides elegant aromas and greater natural acidity.
To make this wine, we start from a cold maceration and, after pressing, the must is defanged by gravity for 24 hours. Fermentation takes place at a temperature below 15 degrees, which allows the process to be slower and the fruity aromas of the variety to be preserved to the maximum.
Bright pale straw yellow color. On the nose, it shows very clean and intense aromas. The citrus aromas stand out, with white flowers, stone fruits, with soft mineral notes. In the mouth, it stands out for its marked acidity, which accentuates its fresh and lively character.
Malcorta is a surprising wine in unique nuances, floral, citrus, with an exquisite natural acidity and a marked persistence.
Seafood and mollusks. Its lively character and freshness also combine perfectly with white meat fish, such as hake, cod or sole, grilled or baked.
