Garmon fermented and macerated for 14 days with indigenous yeasts at a temperature below 28 degrees. When you just ferment is racked to French oak barrels where it is bred for 16 months

maturity measured. Fat and silky tannin. Volume, amplitude, harmony.

Recommended with meat grilled, roasts, vegetables, stews and mature cheeses.
