The Listán Negro variety (in addition to pre-phylloxérica and planted on a frank foot) is exclusive to the Canary Islands. In Lanzarote, because of the volcanic sand that covers it, it gives a unique wine, of little structure, original, aromatic and friendly. In times past, the prolongation of maceration (pretending to extract more anthotians than this variety grants), resulted in rough and astringent wines, especially because of the aggressive tannins of nuggets. It seemed that the Listán Negro grape gave excellent rosés, but not so good red wines. For a decade El Grifo has obtained a well-known Black Listan red, thanks to processing homogeneous batches of grapes; not to squeeze the grapes to prevent the breakage of the very green or very ripe grains of the cluster; making shorter macerations and at a very controlled temperature; and separating the skins from the wort before finishing the alcoholic fermentation. Then we go through barrels some games that we then mix with the rest of the wine intended for the Tinto de Listán Negro Colección. Color: Medium layer wine, ruby red, clean and bright. Aroma: Pleasant, with notes of raspberry and volcanic background, pure freshness. Mouth: Easy, fresh, light and Atlantic mid palate.
