The harvest is manual in its vineyards in the heart of the Ribera del Duero. They are small plots with plants up to 100 years old planted on sandy loam soils with clay compositions at about 890 meters of altitude.
Fermentation in cement contenders 18 meters underground. Aged in French oak barrels of different capacities for 16 months.
Very intense cherry eye color.
On the nose, this Ribera wine stands out for its ripe fruit, aromas of spices and graphite. Notes of red and black fruit, a little pepper and some smoked that then return on the palate.
In the mouth, Dominio del Pidio Tinto 2016 is a fresh and fruity wine. Good balance and with a medium body with fine tannins and an elegant and long finish.
Grilled red meats, cheeses, small game, sausages.
