Cosme Palacio Blanco White wine
The onset of fermentation takes place in stainless steel vats which allows us to have a total control over the temperature and other technical aspects. Almost at the end of fermentation, the mosto-vino is racked to French oak barrels where the end of the fermentation takes place.
For 7 months it raised on its lees in suspension, this gives the wine a glyceric and sweet sensation. We use for this wine barrels with toasted soft from different cooperages.
Color: yellow straw with lemon tones, clean and bright.
Scent: intense, fine and elegant, that feeling is dominated by fruit-pear and notes citrus - against a background of finesse, with touches of vanilla and anise, typical of the aging in new French oak barrels.
Flavor: the wood notes predominate, the Lees provide creaminess, notes of butter and bakery. Very elegant on the palate, fresh and tasty, with an extraordinary balance.
