Only from a unique terroir such as that of the Alais vineyard could such an excitingly different wine be born, where finesse, personality and intensity give rise to our Capricho de Merenzao.
Destemmed and crushed grapes, fermentation for about 10 days with gentle pump-overs, followed by maceration for about 8 to 10 days.
Malolactic fermentation and ageing for 10 months in second and third use French oak barrels follows.
