Ars Collecta Blanc de Blancs Rose wine

Cava made from the selection of vineyards where the varietals show their greatest potential and expressiveness. Chardonnay, predominant varietal, of Costers del Segre with continental climate, Xarel·lo coming from the central plain of the Penedès and Parellada of vineyards of height of Pla de Manlleu, both areas with Mediterranean climate. Night harvest at the beginning of August taking advantage of the cool temperature and avoiding the oxidation of the aromas of the grape. Upon arrival, soft pressing in pneumatic press and the must fermented in small batches at 17 ºC; a small percentage of the must is vinified in French foudre ennobling the coupage. After an aging of 35 months at a constant temperature between the thick walls of our cellars, this Blanc de Blancs Gran Reserva has a long life ahead of it. The whole process we follow for the elaboration of this cava aims to respect what the earth gives us and to achieve a fresh cava with high aging potential.

View: Warm yellow color with golden reflections, clean and bright. Fine bubble that forms continuous rosaries and a persistent crown that indicates a good fermentation in the bottle.

Nose: Soft notes of toast appear, interspersed with stone fruits: peaches and nectarines, on a background of brioche and nuts from the long aging envelope. Very complex, with elegant notes and an aromatic amplitude that improves with time in the glass.

Mouth: Wide, complex, balanced and creamy.
