Aires de Vendimia Godello White wine
VINIFICATION: Selective and manual harvest, carried out in the first fortnight of September. Vinification with de-stemmed grapes. Pre-fermentation maceration for about 48 hours, and spontaneous start of fermentation, with native yeasts, carried out in French oak barrels without temperature control. It does not undergo malolactic fermentation. It remains one year in the barrel with a biological veil and one more year in a stainless steel tank carrying out a biological aging.
AGING: For 12 months on its lees, in 500-liter capacity French oak barrels. Bottled without clarifying, filtering or stabilizing. A precipitate may be present.
Golden yellow color of medium chromatic intensity, very bright and clean. Enormously varietal nose, white fruit, hints of citrus, even slight tropical undertones, floral hints. Powerful, full-bodied mid palate, very well structured, with a large volume and an unctuous touch.
